Falafel Balls

I absolutely love Indian food, and this recipe for falafel that I found online (and changed up a bit, as I always do) is absolutely divine! I tend to be one of those cooks, like my Grandma, who throws in whatever I happen to have on hand that sounds good at the time, and hope for the best.  I encourage you to experiment, just as I do. You may find that adding some new or different, makes it even better!

Falafel balls

1-1/2 cup cooked chickpeas (cooked from dry, or canned, drained)
1/4 cup whole wheat or chicpea flour (I prefer the latter)
1/4 cup loosely packed fresh parsley leaves
Note: Sometime I also add fresh basil, sage, oregano - whatever herb sounds good to suit your taste.
1 Tablespoon fresh lemon juice
1 Tablespoon minced onion
1 Tablespoon Bragg Seasoning
3 cloves minced garlic
1 teaspoon cayenne pepper (optional)
1 teaspoon ground cumin

Current Obsession: 100 Calorie Packs

If your life has been bettered by the presence of 100 calorie packs, and you know it, clap your hands.
I am currently snacking on a Hershey’s “Snacksters” 100 calorie pack, complete with “cereal puffs, chocolate chip cookies, and semi-sweet & milk chocolate chips” and get this: it’s made with multigrain cereal, which I didn’t even know I liked.  And considering that my biggest problem (and most of America’s) is portion control, this little packet is just the right amount of sweetness to get me through another Tuesday afternoon.  And for Wednesday, I have a Reese’s packet!  Score!
Ok, the enthusiasm is a bit excessive, but really…whoever coined the phrase “100 Calorie Pack” is currently sipping margaritas on an island somewhere.  I mean, look what he or she has started…snack packs, pudding, granola bars, cappucino mixes–the possibilities are endless.

This yogurt is SERIOUSLY fantastic. 12 g protein, only 3 g sugar, 35% daily calcium. It does have sucralose though, if you have an aversion to artificial sweeteners.

It comes in vanilla (fab), strawberry (really good), raspberry (ok, not great), and peach (YUCK). I get it in Utah at Smith’s. If you have a Fred Meyer, they would carry it there. Go GIT IT!

Fish & Omega 3’s

I just saw this article about Fish helping to reduce the risk of Dementia and Stroke by 26%. The article says that if you eat fish such as Tuna 3X per week, you can reduce your risk by 26%, and even 1X per week reduces by 13%. Besides tuna, fish rich in omega-3 fatty acids include salmon, mackerel, herring, sardines and anchovies. I still worry a little about the mercury in Tuna, but this seems like a good reason to try to get more of these types of fish or take a fish oil supplement.

Whole foods are the best foods for your body. These are foods that are mainly unprocessed and unrefined such as fruits and veggies and some seeds and nuts.
But the fact is that so many people eat processed foods these days. The problem is that processed foods have so much sodium and fats and preservatives in them. No wonder people are getting sick and obese. Sure, fast foods are easier and faster. But they aren’t healthier.
Take the artificial sweeteners for example. Unless you are diabetic, you shouldn’t be consuming them and even if you are diabetic you shouldn’t consume them in large quantities.
