Here’s a quick excerpt
I should have stopped after one cauliflower-tofu sandwich, but I ate a second one and have been paying for it all evening.
Earlier in the week I made a hummus-like spread made of garlic, tahini, chickpeas, cauliflower, and cabbage. I spread this stuff on two pieces of toast and between them I added baked tofu strips and baked cauliflower. Sort of odd, but very good. Normally, I would eat some fruit or maybe a PB & J about this time, but I’m done with food until 6:15 tomorrow morning.
